Determination of functioning and Problems of Cold Stores in Tokat Province

Abstract

It is known that 25% to 40% of fresh fruit and vegetables produced is discharged rot before they reach
consumers in turkey. In order to prevent this deterioration and maintain quality, it is possible to maintain a certain
period of time in cold storage conditions specific to each product. Tokat province is one of the leading cities in
terms of vegetable and fruit production. Presence, functioning and continuity of cold stores are important in order
to ensure that grown fresh vegetables and fruits can be kept without losing their freshness for a long time. In this
study, the characteristics, functioning and problems of cold storages in Tokat province were investigated. In this
context, face-to-face surveys were conducted with the operators of cold stores. According to research findings,
generally 75% of the existing cold storages were found to store products such as apples, pears, plum, quince,
tomatoes and potatoes. ıt has been identified that on averege 3 people were employed in cold storages, while cold
storages standard and capacities to be low. Considering the fruit and vegetable production potential of Tokat
province, it can be said that the cold storages of the province should be expanded and their capacities should be
increased, and that the existing stores should be improved in standardization and packaging. There is also a need
for regulations and activities to contribute to the development of cold storage
